중국 내륙의 란저우(兰州) 지방에서 기원한 란저우뉴러우라몐(兰州牛肉拉面)이 유명하다. 여기는 면이 무조건 라몐이다. 원래 국물은 뽀얀 흰색에 가깝지만 그냥 먹으면 싱거워서 위 사진처럼 라유(辣油)를 넣어 먹는게 필수다.
