카브랄레스 치즈는 스페인 아스투리아스 지방의 카브랄레스에서 생산하는 블루 치즈이다. 소젖 치즈이지만, 양젖이나 염소젖과 혼합해 만들기도 한다.

Cabrales Cheese

Cabrales is a blue cheese made in the artisan tradition by rural dairy farmers in Asturias, Spain. This cheese can be made from pure, unpasteurized cow’s milk or blended in the traditional manner with goat and/or sheep milk, which lends the cheese a stronger, spicier flavor. All of the milk used in the production of Cabrales must come exclusively from herds raised in a small zone of production in Asturias, in the mountains of the Picos de Europa.
